Barrel Aged Maple Syrup

In collaboration with one of Canada’s finest whisky distilleries,
we are excited to share with you Cosman & Webb’s
Canadian Rye Barrel Aged Maple Syrup


Our idea was simple. We wanted to make a uniquely Canadian barrel aged maple syrup and we wanted it to be exceptional. This meant we had to source barrels with spirits that would complement our syrup, and rye whisky seemed like our best shot (pun intended!). We partnered with Stillhead Distillery, a family owned and operated distillery located on Vancouver Island, and the producer of an exclusive 100% Canadian rye whisky. Working with the Stillhead team has been a great experience for us. Not only are they really cool people but they’re also incredible geeky about their products, and they were excited to create their own maple syrup cask finished rye whisky re-using the barrels we emptied (more on that in a moment!).


Some facts about Canadian whiskies: they must be aged a minimum of 3 years in 700 litre or smaller wooden barrels. They must have a 40% ABV (Alcohol by Volume), they must be made of a cereal grain, and they must be made in Canada.


Fast forward to 2023, Cosman & Webb’s uniquely Canadian barrel aged maple syrup is now ready and available! The combination of Stillhead’s rye-whisky barrels filled with our organic maple syrup aged for 12 months, yields stunning results. Our amber, rich taste syrup extracted all of the toasted oak and malt flavours from the rye-whisky barrels for a wonderfully smooth and complex maple syrup. Notes of rich brown butter, caramel, vanilla and spice turn an already stunning maple syrup into something extraordinary.


Enjoy this syrup on special occasions in the same way you would enjoy Cosman & Webb traditional maple syrup. Try it in your banana bread recipe or pour it over ice cream. Use it in place of simple syrup for your cocktails, or of course, create an extraordinary breakfast of pancakes, waffles, crêpes, or French toast.

Stillhead Distillery

Founded by the Colebank family in 2017 on Vancouver Island, BC. Master Distiller Brennan Colebank is already making his mark. Each year introducing more internationally award-winning spirits, Brennan and his team continue to impress with their limited release cask finished whiskies, including newly released 100% B.C. rye grain maple syrup cask finished whisky, aptly named BC/QC.

BC/QC Whisky – Maple Syrup Cask Finish (46% alc./vol.):
The best of British Columbia meets the best of Quebec. This 100% B.C. rye grain whisky spent 3-4 years in ex-bourbon casks. The spirit was then transferred to once used whisky barrels recently aging Grade A maple syrup from Cosman & Webb. The nose reveals maple candy, toffee, Panettone bread, vanilla custard, red currants and light notes of oak. On the palate, maple cream cookies, butterscotch, dried apricot + orange peel and Christmas spices deliver a lingering, well balanced finish. Expect wonderful maple syrup flavour, without a lot of the sweetness in other maple whiskies
